When Jeremy Lyman and Paul Schlader started Birch Coffee 10 years ago they had zero experience in the coffee industry, but a ton of love for the quintessential daily beverage. The two entrepreneurs put everything into building their operation from the ground up, becoming some of New York City’s foremost coffee experts in the process.
Ten years later, New York City’s and the country’s coffee scene has come a long way. It’s now common to find single-origin coffees and pour over cups on café menus and consumers have started thinking about terroir when talking about coffee. And just as the specialty coffee industry has evolved so too has Birch Coffee. Today, the coffee brand includes 12 shops, has a wholesale business and employs 80 people.
