Cafe de Olla
8 cups of distilled water
1/3 cup Brown Sugar (or 3 Piloncillo cones)
1 Cinnamon Stick
2 Whole Allspice Berry
3 Whole Black Peppercorns
4 Strips Orange Zest with no white pulp remaining
6-8 Tablespoons of Fresh Ground Single-Origin Mexican Chiapas (Or Grounds & Hounds coffee of your choice)
Pour 8 cups of water into a large saucepan (or olla), then add the brown sugar (or piloncillo), cinnamon stick, clove, all spice berries, black pepper, and orange zest to the water.
After adding all ingredients to the pan, bring the water to a boil.
While the water prepares to boil, coarsely grind 8 tablespoons of your favorite Grounds & Hounds coffee to prepare for the next step. (we recommend our Mexican Chiapas for this brew)
After the water begins to boil, the brown sugar has fully dissolved, and the mixture becomes fragrant, remove the saucepan from the heat, add the fresh ground coffee, and let the grounds steep for 8-10 minutes.
Let the coffee grounds settle on the bottom of the pan (about 7-10 minutes), and then begin to ladle the Café de Olla into individual cups (we suggest our Diner Mugs, but we may be biased).
