There aren’t many coffee shops where the baristas ask you to taste test your cup before purchasing but it’s been part of the business model at San Francisco’s Philz for 18 years.
Before the coronavirus pandemic forced them to close for two weeks, customers would wait at the counter and enjoy conversations about flavor profiles with the team of expert baristas. Customers were encouraged to taste test before purchasing their cup. If it wasn’t what they wanted, the team would go back and start again. These days orders are placed ahead of time for pick up through the Philz App and while customers are not able to try their drink before purchase, they’re still encouraged to test their drink before leaving.
