SAN RAFAEL, CA —APRIL 19, 2013 —Wild Card Roasters, the artisan coffee and tea company located in Marin County, California is introducing a new Fair Trade Certified and Certified Organic coffee under their Weaver’s Coffee & Tea Brand – Weaver’s MEXICO CHIAPAS AZTECA.
The characteristics of coffee change with each lot– master roaster and founder John Weaver is constantly searching the world for the best green coffee. From time to time, Weaver comes across an exceptional bean at the tasting table, and he has to get it out there. The beans from MEXICO CHIAPAS AZTECA are very special, and Weaver carefully hand roasts them into a very distinct coffee.
MEXICO CHIAPAS AZTECA is located in the volcanic highlands of Southern Mexico, in one of the most important hotspots for biodiversity in the world.  The Federacion Indigena Ecologica De Chiapas – (FIECH), was initially created by farmers who united three small co-ops.  FIECH has grown to over 21 different municipalities located in Chaipas, and it has benefited from higher incomes through Fair Trade sales. When farmers secure a fair price per pound for their coffee, it creates a stable community where families are able to invest in better farming practices, training, and workshops.
Weaver works completely by hand – his roasters are entirely mechanical– so he can be hands-free to truly control the time, temperature and load size of each batch of coffee he roasts. “Hand-roasting coffee is my passion – I look forward to creating new blends, and coming into work each day to do something I love, roasting coffee”.
