The Glass Knife already has dessert fans eagerly awaiting its opening this fall as the go-to destination for elevated, decadent cakes and hand-crafted confections. Now coffee lovers also have a reason to take notice of this unique restaurant concept.

Recognizing that nothing goes better with dessert than the perfect cup of coffee (and vice versa), as well as the importance of the quintessential morning coffee stop, The Glass Knife is bringing its Guests’ everyday coffee routine to the next level with the reveal of two firsts for Central Florida – an exclusive brewing partnership with Onyx Coffee Lab, a celebrated, one-of-a-kind coffee roaster; and, the installation of Modbar’s suite of brewing systems.

Onyx Coffee Lab, founded in Arkansas by Jon and Andrea Allen, follows a dedicated “Farm to Cup” approach that places a personal touch on every step of the process – from their intricate crop selection methods to small-batch roasting, blending and testing.

“At Onyx, we take great care and pride in the top-quality products we craft and are devoted to never settling for ‘good enough,’” said Jon Allen. “We are proud to partner with The Glass Knife team, who share in our passion for delivering a first-class experience, to bring our coffee to Central Florida for the first time.”

Jon forms personal, first-name basis relationships with the farmers, going directly to the source to ensure that Onyx coffee is harvested at peak ripeness, is free of defects, and contains the perfect levels of sugar and acid.

Across the country, industry professionals and coffee aficionados have taken note of Onyx’s unique methods and products. Onyx team members most recently were awarded No. 1 Roaster, No. 1 Brewer, and No. 2 Barista, at the U.S. Coffee Championships.

The Glass Knife Coffee Program Manager Brett Ware underwent extensive training with the Onyx team to gain a deeper understanding of Onyx’s unique drink preparation techniques. In the coming weeks, Onyx’s champion brewer will travel to Orlando to personally train The Glass Knife’s team of baristas to ensure that guests are served the perfect cup of coffee every time.

“The Glass Knife’s devotion to quality and passion for developing the best coffee program in Orlando drew me to join the team and I am thrilled to help bring their vision to life,” said Ware.

The Glass Knife will brew two of Onyx’s signature blends year-round – Sugar Skull and The Monarch Espresso – in addition to a seasonal rotating selection of single-origin coffees.

In another first for Central Florida, The Glass Knife will remove the traditional barrier between its baristas and Guests, both literally and figuratively, with the installation of Modbar’s full suite of cutting-edge brewing systems – proudly “Made in the USA” in Fort Wayne, Indiana.

The espresso, steam and pour-over modules work as self-contained “taps,” moving the large equipment under the counter. The streamlined profile of the above-counter tap stands in stark contrast to the traditional bulky machines found on the countertops of most coffee shops and will foster organic, inviting and educational relationships between The Glass Knife’s baristas and their Guests by encouraging conversation and genuine engagement.
